Tasting Notes
Our 2105 Cheval Sauvage Pinot Noir starts with aromas of strawberry, rhubarb, dark cherry, spice, and a touch of forest floor. It follows with subtle minerality, and an earthy, elegantly structured mid-palate. Culminating in a long and elegant finish with red fruit and spice, with hints of vanilla and smoke. 100% Pinot Noir
Vineyard Notes
Sourced from top vineyards in Santa Maria Valley, Garey, Rancho Real, Rancho Sisquoc, and Bien Nacido. Garey Vineyard is well known for quality Pinot Noir and low yields. Rancho Real is unique for it's sandy soils and south west facing hills. It is a difficult place to cultivate grapes with lot's of wind, and steep sandy slopes, but difficult often turns out to mean beautiful, and this fruit is just that. Rancho Sisquoc is located as far east as you can get in the Santa Maria Valley, and has slightly higher temperatures bringing slightly more spice and body. Bien Nacido is world renowned for it's ability to produce world class Pinot Noir and Chardonnay, and at Wild Horse, we have been lucky enough to source this vineyard since the beginning.
Winemaker Notes
All of the vineyard blocks were hand harvested separately in September, and delivered to the winery at 7:30 in the morning. Grapes were gently destemmed and delivered to open top tanks, allowed to cold soak and extract color for 3 days, then punched down twice per day, and pressed off after ten days on the skins. Only French oak barrels were used to age the Pinot Noir. In May, the best barrels from Santa Maria Valley were selected for the Cheval Sauvage of which 45% are new. The wine was then allowed to age until December when it was put in bottle.

The Cheval Sauvage Pinot Noir perfectly pairs with roasted pork loin, grilledĀ salmon, or smoked wild duck.
