This Reserve Paso Robles Merlot has aromas of ripe cherry, cedar, and cocoa followed by a mouth feel that is full, sumptuous, with chewy tannins, and abundant with red fruit characteristics. This wine will pair well with an oven fired pizza with red sauce and barbeque short ribs.
95% Merlot, 3% Zinfandel & 2% Cabernet Sauvignon
This reserve Merlot blend is comprised of three vineyards: Carriage Vineyard in the Templeton Gap, Rest and Be Thankful Vineyard on the Westside in Paso Robles, and Pine Creek Vineyard in Southern Monterey County. Carriage and Valhalla have produced consistent reserve quality wines for Wild Horse for many years. Pine Creek is a newly discovered gem that lies 12 miles north of the Paso Robles/Monterey County line. Its deep color, rich mouthfeel, and excellent balance made it a perfect accompaniment for this blend. All of these vineyards benefit from afternoon westerly winds from the Pacific Ocean that relieve the hot days creating cool nights. These large diurnal swings permit for even ripening, low vigor vines, and balanced acidity contributing to extremely bold, well structured wines.
Upon delivery to the winery, the fruit was destemmed and crushed with varying amounts of whole berries and pumped into both open and closed-topped fermentation tanks where they were yeast inoculated and then pumped over two times per day. Grapes were pressed 10-20 days after yeast inoculation and then the wine racked off of heavy solids to barrel for the completion of malolactic fermentation. This Merlot was aged for 14 months in 50% new and 50% one and two year old barrels French oak barrels.
