2012 Wild Horse Unbridled Pinot Noir Arroyo Grande Valley
100% Pinot Noir
This reserve Pinot Noir from the Arroyo Grande Valley is true to form with high tone spice driven aromatics. Hints of Anise, cherry cola and holiday spices are coupled with rich mouth-feel and soft tannins. Beautifully bright acidity allows this wine to pair with a wide range of fare; from grilled salmon, to roasted turkey with cranberry sauce and sage stuffing, or fried chicken and waffles with béchamel.
This bottle of Unbridled Pinot Noir is comprised of two clones from the Laetitia Vineyard: 2A and 667. Clone 2A, which is 25% of the blend, is known for high toned spicy aromatics and finesse. The 667 clone, which is 75% of the blend, is an all encompassing clone with excellent color, tannin and red berry contribution. The two clones together make this a most delicious and savory wine. This site, known for its hillside, rocky terrains and ocean views, is an excellent area for producing deep, rich Pinot Noirs.
The lots of Pinot Noir were picked at night and delivered to the winery in the cool early morning hours. Grapes were destemmed, cold soaked, and then fermented in small open top tanks. The must was punched down 2 times per day during primary fermentation. Each lot spent at least 7-10 days on skins to maximize extraction and achieve softer tannins. After pressing, each lot was then racked once from tank into 100% French oak barrels for malolactic fermentation and 14 months of aging. We selected only the finest barrels to produce this extremely limited bottling.
